Most coffeeshops still operate primarily on cash. Banks treat the industry as high-risk, so card payment isn't guaranteed everywhere, and where it exists, it sometimes comes with a surcharge. Bring cash. It's not an old habit, it's the reality of an industry that legally operates in a grey zone.
